This concern includes not only the poultry sector of the poultry industry, but also the commercial egg industry. Foodborne pathogens can be in contact throughout the production chain, from initial hatching to processing and ultimately to poultry retailing and cooking. The prevention and control of these pathogens in industrial poultry production requires the identification of their sources and transmission routes.
