Abstract: The purpose of the study was to evaluate the distribution menus in the canteens of pre-school institutions in Chisinau, Republic of Moldova. Twenty distribution menus from two preschool educational institutions with a capacity of 210 children aged 3-7 years between 2016 and 2017 were studied. It was calculated the quantitative of proteins, lipids, carbohydrates, mineral salts and vitamins for main meals (breakfast, lunch, quinces and dinner), with the help of the “Chemical composition and energy value of food” tables. The protein consumption during meals was insufficient – 58.7-62.3 g, that is 86.3% and 91.5% from the norm – 68 g (100%). The children consumed lipids – 39.4 g (57.9%) and 47.3 g (69.6%), the deficiency was 42.1% and 30.4%, respectively, compared to the daily norm of lipids (68 g). The amount of carbohydrate consumed per day is equal to 373 g and 348 g, showing an overdose of the norm. So, children are provided with an insufficient amount of proteins and lipids and excess of carbohydrates, that can lead to various problems in the process of harmonious growth and development of children.
Цель исследования состояла в оценке меню-раскладок в дошкольных учреждениях города Кишинэу, Республика Молдова. Были изучены 20 меню-раскладок в двух дошкольных образовательных учреждениях вместимостью 210 детей в возрасте от 3 до 7 лет в течение 2016 и 2017 годов. Было подсчитано содержание белков, жиров, углеводов, минералов и витаминов для основных приемов пищи (завтрак, обед, полдник и ужин), с использованием таблицы «Химический состав и энергетическая ценность продуктов питания». Потребление белков было недостаточным – 58,7-62,3 г, что составляет 86,3% и 91,5% от нормы в 68 г (100%). Потребление жиров – 39,4 г (57,9%) и 47,3 г (69,6%), соответственно недостаток составил 42,1% и 30,4%, по сравнению с суточной нормой жиров (68 г). Количество углеводов, потребляемых в течение дня, составляло 373 г и 348 г, что свидетельствует об избытке. Таким образом, меню-раскладки характеризуются недостаточным содержанием белков и жиров, и избытком углеводов, что может привести к различным проблемам роста и развития детей.
