Abstract: | Nitrates and nitrites are commonly encountered in food because of their presence in natural nitrates as soil, water, air etc. Nitrate is relatively non-toxic, but its metabolites can produce a range of effects on health, risks associated with glioma to adults, thyroid cancer. It was assessed the potential impact on health through exposure scenario through some vegetables, comparing nitrate exposure estimates with Acceptable Daily Intake (ADI) for nitrate of 222 mg / day for a person weighing 60 kg. It was established that consumption of vegetable in accordance with minimum standards of food as the food basket of subsistence minimum, a person weighing 60 kg would be expose to 115.21 mg / day of nitrates. Нитраты и нитриты обычно содержатся в продуктах питания из-за их присутствия в почве, воде, воздухе и т.д. Нитраты относительно нетоксичны, но их метаболиты могут оказывать нежелательные эффекты на здоровье, связанные с раком щитовидной железы и риском развития глиомы взрослых. В работе проведена оценка экспозиции и суточного поступления нитратов с наиболее употребляемыми овощами путем сравнения с величиной ADI для нитратов – 222 мг/день для человека весом 60 кг. Было установлено, что потребление овощей, в соответствии с минимальными нормами продуктов питания, включенных в продовольственную корзину прожиточного минимума, человеком весом 60 кг составляет 115.21 мг/сут. нитратов. |
