Abstract:
Natural anti-nutritional and toxic substances are widespread in different foods. They are
represented by a broad spectrum of compounds as phytic acid, oxalic acid, solanine, inhibitors of
various enzymes and others. Consumed in excess the mentioned substances may significantly
affect the human organism by reducing the nutritional value of food, inducing or aggravating of
some pathological situations. There are elucidated also some opportunities to reduce or even to
exclude the negative effect of these substances.
Substanţele antinutritive şi toxice naturale sunt răspândite în diferite alimente. Acestea sunt
reprezentate printr-un spectru larg de compuşi ca acidul fitic, acidul oxalic, solanina, inhibatori
ai diferitor enzime etc. Consumate în exces substanţele menţionate pot influenţa starea
organismului uman prin diminuarea valorii nutritive a alimentelor, inducerea sau agravarea unor
stări patologice. Sunt elucidate, de asemenea, unele posibilităţi de diminuare sau chiar de
excludere a efectului negativ a acestor substanţe.
